How long until it peaks?
In King Arthur Baking's tests at about 78°F (26°C), a 1:1:1 feeding peaked in roughly 4 to 6 hours.
Bigger ratios take longer to peak, and a warmer spot is faster. Learn your own starter's timing.
- Anything you don't keep is discard. It keeps in the fridge for a week or two for discard recipes, but bake it before eating it.
- Put a rubber band around the jar at the starting level so the rise is easy to see.
- If your starter peaks too early for your schedule, use a bigger ratio. If it's sluggish, go back toward 1:1:1 and find a warmer spot.
